FALL COOKING: PERUVIAN CHICKEN

It isn't easy saying goodbye for now to our summer salads, rosés and outdoor grilling. However, I think that we can all agree that there's nothing like the aroma of a hearty stew simmering or homemade cookies baking in the kitchen as the days become longer and temperatures begin to drop.


Cooking is not my forte, but that doesn't stop me from wanting to create deeply rich, savory meals and my philosophy is pretty simple - find recipes that bring the flavor; can do it's own thing either in the oven or slowly on the stovetop and doesn't require a ton of complicated steps or ingredients. This Peruvian chicken recipe from Just Add Hot Sauce meets all of the criteria and then some.


I have tried many, many of Alex's delicious recipes over the past few years, however, her Peruvian chicken recipe has my girls and I hooked. I first made made it Thanksgiving of 2020 in lieu of a turkey and I haven't made a turkey for Thanksgiving since. The thing about this recipe is that it doesn't take a lot of ingredients to bring the flavor (just a few everyday spices, olive oil and soy sauce) and it needs even less supervision once it's in the oven which, to me, is the dream because I'd much rather use the time to set a beautiful table.


If you're looking for an uncomplicated, full of flavor main course to incorporate into your cozy weather dinner menu, this chicken with it's accompanying "green sauce" should definitely be a contender.
